Happy almost Spring!

With Easter just around the corner, I’ve been thinking about menu planning. I don’t love cooking but the family likes to eat (lol) so I try to plan ahead so I’m not stressed.

When I’m hosting, I like to try to do as many things in advance as possible as well. With my small kitchen, it is hard to prepare food in a full house.

Menu planning is also difficult for my family because everyone has very different tastes. We have picky eaters, a vegetarian, and my husband who loves his meat and potatoes.

If you struggle with any of the above like I do, here are some of my favorite Spring recipes. All of them are easy and many can be prepared ahead of time.

For every single occasion in our house, my go-to appetizer is a spinach dip platter. I have yet to share that recipe here but you can even buy that pre-made in the grocery store.

I lay that out with lots of veggies, cheese, and olives so that there’s something for everyone to pick from.

Another favorite of mine is the herb butter crostini. I first made this last year and it’s super refreshing for Spring!

Another favorite appetizer is this sun-dried tomato hummus recipe. I love fresh hummus and it’s really quick and easy to make yourself. There’s also a lemon hummus recipe in that post.

Spring Salad ideas

When it comes to salads, this mushroom salad recipe is a good one. It’s so hearty it can be a meal by itself. When my vegetarian daughter is home I leave the bacon crumbles on the side.

The dressing contains a little bit of mustard which goes so well with the eggs.

Another recipe I make all spring and summer long that everyone loves is this macaroni salad recipe. The photos from that post aren’t so good but the recipe really is!

Brunch recipes

One meal I don’t mind cooking that much is breakfast. The last few years on Easter, I went with brunch rather than dinner. Brunch foods are easier for a crowd and easier to please multiple different appetites.

This easy hash brown quiche recipe was loved by everyone and can be made the night before.

You can serve that with bagels, fruit, and muffins. It also pairs especially well with my make-ahead French toast recipe. The French toast can be assembled the night before and baked in the morning.

Ham Recipe for Easter

If you’re family (like my husband) prefers traditional Easter meals, this recipe with ham and vegetables looks like a good one!

Spring dessert recipes

Desserts are more my area of expertise!

I enjoy making and eating dessert much more than full meals!

If you love chocolate but want a lighter dessert for Spring, this cake is made with angel food cake mix and homemade frosting is a great option. It’s one of my favorites, I drool every time I come across this photo!

With St. Patrick’s Day coming up this weekend, I wanted to include these Irish Blonde Brownies. It’s a simple recipe with an Irish twist!

I’m going to make Shepherd’s pie for St. Patrick’s Day this year – I’ll add that to my blog recipes later.
