Welcome to month #3 of our Ingredient Challenge! This is the one post each month where I take a break from design and share a recipe. Our monthly ingredient challenge is a recipe exchange, where each recipe has to be original and it has to include that month’s chosen ingredient. This month’s chosen ingredient is peanut butter, my favorite! I actually eat a peanut butter sandwich for lunch several times a week. No jelly, just peanut butter.
I’ve tried several times (before this challenge) to re-create my grandmother’s peanut butter icing recipe. She used to make it and put it on cupcakes. It was the perfect mix of icing and peanut butter. It was so good, I could never eat just one. So when I saw this month’s ingredient was peanut butter, I decided to again give it a try. After several different attempts, over several different days, I came up with a recipe that is pretty close to how I remember hers. It also got the approval of my husband and my younger daughter who also love peanut butter. We go through a lot of peanut butter in this house!
The recipe (found at the bottom of this post) is easy to make, and only involves four ingredients. Milk can be substituted for the heavy cream. You could also dress this up with bits of peanut butter cups on top.
