Last week I made truffles for an antique event I participated in. This event was French-themed so I wanted to make a dessert that fit the theme.

Truffles were a good fit. Truffles with red wine sounded even better. This was my first attempt to make truffles, and they came out really good. Plus, they’re so easy to make and only require three simple ingredients. If you skip the wine, then you only need two ingredients.

Toppings are optional but I recommend using them because they help the truffles keep their shape, especially if it gets warm.

iNGREDIENTS fOR cHOCOLATE tRUFFLES

Dark Chocolate: Any dark chocolate that can be melted works for this recipe. Keep in mind you’ll need 8 ounces but many dark chocolate bars from the grocery store come in 4-ounce packages. I used Lily’s dark chocolate baking bar for this recipe. You could even use chocolate chips for melting in a pinch. (See also the top 10 chocolates for baking).

Heavy Whipping Cream: I bought a larger container of heavy cream because I was making this for a crowd. If you only want one batch a pint size is more than enough.

Red Wine: I used Cupcake brand wine using their Red Velvet flavor. It’s inexpensive and it’s good. It’s just sweet enough to be the perfect compliment for this recipe.

Optional Toppings: Toppings are optional but the truffles are soft so coating them helps keep their shape. I bought extra chocolate and used the same chocolate to drizzle over them. I also used crushed almonds as a topping.

Are Ganache And Truffles The Same Thing?

After making this recipe I watched my daughter make chocolate ganache and realized it’s the same two ingredients for ganache and truffles. Heavy cream and chocolate are the ingredients for both.

I looked it up online and found that they are basically the same recipe. The only difference may be different ratios of chocolate to cream.

The truffles are a very soft chocolate, the same as ganache.

How TO Make Chocolate Truffles

This is a very easy, no-bake recipe. All you’ll need to whip up these delicious treats are two saucepans and a heatproof bowl.

First add wine to one of your saucepans. You’ll bring that to a boil and then let it simmer to reduce, about 5 minutes or so.

Break the chocolate into pieces and put that in your heat proof mixing bowl while waiting for the wine to boil.

Once the wine is simmering, heat up your heavy cream in the other saucepan. After that boils, pour the hot cream over the chocolate pieces and let it sit for about a minute. Then use a fork to mix it up until the chocolate is melted. (Image 1-2)

Once that’s mixed your wine should be reduced. Add that to your chocolate mixture and stir until combined. (Image 3).

Put the truffle mixture in the refrigerator to firm up. I recommend at least two hours. Or put it in overnight.

This is what it looks like when it comes out of the fridge. Use a small cookie scoop to scoop out spoonfuls and roll them onto parchment paper (or wax paper). You could also use a melon baller or ice cream scoop. The truffles will be soft and messy as you roll them.

I melted additional chocolate as one of my toppings. For some truffles, I dipped them in the melted chocolate, and for others, I drizzled the chocolate over them.

I also had slivered almonds on hand so I crushed them up to use as a topping on half of my truffles.

Toppings for Truffles

For topping your 3 ingredient truffles you can use anything you like. Here are some ideas for different coatings:

  • Crushed nuts
  • Coconut
  • Cocoa powder
  • Powdered sugar
  • Sprinkles
  • Melted chocolate
  • Chocolate shavings

My favorites were the chocolate-dipped truffles. You can never have too much chocolate in my opinion. Alternatively, you could use melted white chocolate to add some color contrast.

Serving the truffles in mini cupcake wrappers helps keep things less messy.

Storing Truffles

The truffles don’t hold up well at room temperature. They will get soft if it’s too warm. I highly recommend storing these in the refrigerator in an airtight container until you serve them. Using chocolate coating on the outside will also help them from getting too soft and melty.

We enjoyed these so much I’ve already made a second batch of these 3-ingredient chocolate truffles! I love an easy recipe especially when the results are decadent chocolate truffles! The velvety richness will have you at first bite.

3-Ingredient Truffles With Wine

Easy, delicious chocolate and red wine truffle recipe.
Prep Time 20 minutes
Course Desserts
Servings 12 truffles

Ingredients
  

  • 8 oz Dark Chocolate broken into pieces, plus extra for topping
  • 1/2 cup Heavy Cream
  • 1/2 cup Red Wine

Optional Topping

  • Chopped Almonds

Instructions
 

  • Place chocolate pieces into a heat proof bowl.
  • Heat the wine in a saucepan and bring to a boil. Then reduce heat and let simmer for 5-10 minutes until reduced to approximately 1/4 cup.
  • While the wine is simmering, heat the heavy cream in another saucepan until it begins to boil.
  • Pour the hot heavy cream over the chocolate pieces and let sit for about 30 seconds to 1 minute. Then stir with a fork until the chocolate is completely melted.
  • Pour the red wine over the chocolate mixture and stir until incorporated.
  • Refrigerate until firm, at least two hours.
  • Scoop the chocolate mixture and roll into 1-2 inch balls. Use parchment paper to keep it from sticking.
  • Roll the truffles in chopped almonds or dip in melted chocolate for topping.

Notes

Keep truffles refrigerated until serving, they do not hold up well in the heat.
Use additional dark chocolate for topping your truffles.  You can dip them in melted chocolate or drizzle them with it.  You can also use chocolate shavings as a topping.
We used slivered almonds and crushed them for our almond topping.
More topping ideas: sprinkles, cocoa powder, confectioner’s sugar, and other chopped nuts.
