White Chocolate Macadamia Nut Cookies

Ingredients
  

  • 1 cup unsalted butter softened
  • 1/2 cup white sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 1 cup light brown sugar firmly packed
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 1 12 oz package white chocolate chips
  • 1 1/2 cups chopped macadamia nuts toasted if desired

Instructions
 

  • Line baking sheets with parchment paper, Preheat oven to 375 degrees.
  • In mixing bowl, mix the unsalted butter, white sugar and brown sugar until well combined. Add the vanilla extract and eggs. Add the baking soda, flour, and salt scraping the sides and bottom of the bowl to be sure ingredients are well combined. Add the white chocolate chips followed by the macadamia nuts. Mix at low speed until incorporated.
  • Chill the dough for 20 minutes.
  • Using floured hands, scoop about 2-3 tablespoons of the dough and roll into a ball. Bake until browned around the edges, approximately 9-13 minutes. Rotate the baking sheet halfway through baking.

Notes

To make these cookies even more rich and tasty, we used Madagascar vanilla extract and Ghirardelli white chocolate chips.
