Method
- Press shredded hash browns into a well-greased pie dish.
- Bake at 325 degrees for 20 minutes.
- While cooking the hash browns, beat the eggs, heavy cream and nutmeg together in a mixing bowl.
- Remove from oven. Add a layer of the shredded cheddar cheese.
- Add a layer of chopped onions.
- Add a layer of baby spinach.
- Pour in the egg mixture.
- Bake at 325 degrees for 50-55 minutes.
- Top with crumbled bacon bits in the last 5-10 minutes of baking, if desired.
