Wash and dry fresh strawberries. Place the strawberries into a large mason jar, or other container that has a lid.
Open the champagne and pour over the strawberries until covered. Place lid on the jar.
Place the mason jar in the refrigerator and let sit for 24 hours.
Remove the jar from fridge, Drain the champagne from the strawberries. Place the strawberries on paper towels and pat until thoroughly dry.
Insert toothpicks into strawberries and melt chocolate wafers according to the package directions.
Dip each strawberry into the melted chocolate. If desired, immediately add sprinkles or other embellishements.
Place on parchment paper until chocolate is firm.
