Chocolate and Caramel Oat Bars
These easy oat bars are sweet and rich, and can be topped with ice cream.
- 2 1/4 cups flour divided
- 2 cups quick-cooking oats
- 1 1/2 cups brown sugar packed
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups cold butter
- 2 cups semisweet chocolate chips 12 ounces
- 1 cup pecans chopped
- 1 jar caramel ice cream topping 12 ounces
Combine 2 cups of the flour, oats, brown sugar, baking soda, and salt. Cut in butter until crumbly. Set half aside for topping.
Press the remaining crumb mixture into a greased 13-in. X 9-in. X 2-in. baking pan. Bake at 350 degrees for 15 minutes.
Sprinkle with the chocolate chips and pecans. Whisk the caramel topping and remaining flour until smooth, drizzle over top. Sprinkle with the reserved crumb mixture.
Bake for 18-20 minutes or until golden brown. Cool before cutting.
